Hoedeopbap(회덮밥 in Hangul) is basically steamed rice mixed with saengseon hoe(raw fish) and various vegetables. Different vegetables can be used such as lettuce, cucumber, onion and sesame leaves, while generally preferred fish types are halibut, sea bass, rockfish, tuna, salmon, or whitefish.
As many other dishes from the Korean cuisine, this one has several variations too. Some examples are gul hoedeopbap (굴회덮밥) made using raw oysters and gajami hoedeopbap (가자미 회덮밥) made with raw sole. Don’t forget to check out the recipes!
