Kimchi Bokkeumbap(김치 볶음밥) is one of the countless variations of Korean fried rice. It’s main ingredients are rice and kimchi(usually over-ripened kimchi is preferred) but meat and various vegetables can also be added if desired.
When preparing Kimchi Bokkeumbap, instead of fresh kimchi and rice, well-fermented kimchi and chilled rice are usually used in order to produce a richer flavour. Popular meat additions are pork and spam, but almost all types of meat can be used like chicken, beef or tuna, along with vegetables such as onion, carrot or courgette. Sometimes, a fried egg is placed on top of the dish.
Kimchi Bokkeumbap is cheap and easy to prepare, therefore it is a popular dish, especially among students as an alternative to expensive meals.
